Italian Comfort food, a solid business idea and a great location in Eastern Ontario are the key ingredients for a successful bakery
Rita Palumbo recognized a great opportunity when she saw it. Her Italian heritage brought back memories of childhood comfort foods, but a health condition meant she had to create gluten free recipes.
“When I saw the expansion of the gluten free market, that’s when it occurred to me to connect my gluten free recipes with a business idea.”
The result is Zia Rita’s Gluten Free Bakery in Bath, Lennox & Addington County. She chose Bath because it is on a tourist route, and also because it is central to many business areas.
“I think collaboration with other businesses is so important.”
That collaboration includes a bistro across the street as well as a new coffee shop in Amherstview.
Zia Rita’s Gluten Free Bakery is part of the Food and Beverage Region developed by four Ontario East municipal economic development offices; Hastings County, Prince Edward County, Lennox & Addington County and the Frontenac Community Futures Development Corporation.
